Sweet potato burger with avocado salsa

  • 250gr sweet potatoes
  • 4 whole wheat (or spelt) buns
  • 400 gr white leaked beans
  • 1 bowl of grilled paprika
  • 100 gr rocket salad
  • 1 tbsp flour
  • 1 egg
  • 2 to 4 tsp bread crumbs
  • 2 tbsp chopped parsley
  • 1 clove of garlic
  • A bit of cayennepepper
  • Pepper & salt

Avocado salsa:

  • 1 avocado
  • 150 gr cream cheese
  • 1 tbsp limejuice
  • Pepper & salt


Step 1: Preheat the oven to 180°c. Cut the sweet potatoes open and drizzle some olive or coconut oil on them and roast them for 15 minutes

Step 2: Get the flesh out from the skin. Put it in a blender and then add :
1 egg
Minced garlic
Cayenne pepper
Pepper & salt.

Mix this up and if the consistency is still too liquid then add some panko.

Step 3: Make burger shapes from the mix and bake them both sides until crispy in olive or coconut oil.

Step 4: Cut the grilled paprika in stripes. Then take the flesh of the avocado and mush it with the sour cream, lime juice and pepper & salt.

Step 5: Open up the buns, place the bun on a bed of rocket salad and then top the burger off with the bell peppers and a big spoon of the avocado creamy sauce.
